As a Tampa food photographer, I’m always on the lookout for recipes that not only taste amazing but look stunning in photos. A Pineapple Margarita is the perfect example. This tropical twist on a classic margarita is vibrant, refreshing, and bursting with the flavors of summer. Whether you're throwing a backyard barbecue or just need a moment of paradise in your day, this drink is sure to transport you to a sunny beach.

Ingredients:

2 cups fresh pineapple chunks: Sweet, juicy pineapple is the star of this cocktail. Fresh pineapple works best, but canned pineapple in juice will do in a pinch. I like using Dole pineapple jucie for quick and easy mixing.


1/4 cup lime juice: Freshly squeezed lime juice balances the sweetness of the pineapple with a tangy kick. Tampa food photographer Nina Bashaw


1/4 cup tequila: Use a good-quality silver or blanco tequila for a smooth, crisp flavor. I personally use Flecha Azul (it's backed by Marky Mark, so you know its good)


2 tablespoons triple sec: This orange liqueur adds depth and enhances the tropical flavors.


Optional: 1 tablespoon agave syrup: Adjust to taste for a touch of sweetness. If you're like me and don't like your cocktails sweet you can completely omit this step.


Ice cubes: Plenty of ice to keep your margarita chilled.


Salt and chili powder for rimming: A salted rim with a hint of chili adds a delightful contrast to the sweet and tangy drink.


Lime wedges and pineapple slices for garnish: These add the perfect finishing touch to your margarita.

Prepare the Rim: On a small plate, mix salt and a pinch of chili powder. Rub a lime wedge around the rim of each glass, then dip the rims into the salt mixture.


Blend the Pineapple: In a blender, combine the fresh pineapple chunks, lime juice, tequila, triple sec, and agave syrup. Blend until smooth.


Serve: Fill your salt-rimmed glasses with ice cubes and pour the pineapple margarita mixture over the ice.


Garnish: Add a slice of pineapple and a lime wedge to the rim of each glass for a tropical garnish.
